Success in the new space will be dependent on bringing back the energy and vibe of Fong’s Pizza from 15 years ago. The design should accentuate the uniqueness of the Fong’s theme while re-establishing recognition of the property as a tiki bar in addition to a pizza shop.
Versatile Operations
The end product will permit flexibility in service depending on the time of day. At non-peak times the seating areas should be able to condense in order to maintain an energetic feel for patrons. Late night pizza by the slice sales should be handled in the “chute” condition, with the remainder of the restaurant closed off.
Celebrate the Past
The design should incorporate some nods to the past, whether an expression of the post-war quonset hut building type or to the past tenant, Peace Tree, who originally assisted in bringing life to the space and the East Village.
